I feel like they're both correct, with slightly different meanings. The first is specifying that you're riding with Pat and that this is going to happen on Saturday — implying that there's only one instance of riding under discussion. The second seems to leave open the possibility of more ridings besides the one mentioned.
I am riding with Pat, Saturday. Find someone else to ride with you, and I won't leave one day sooner or later, either.
I am riding with Pat Saturday. But on Friday I'm riding with Vanna.
