Using veracrypt for Ubuntu installed on Nexus 7
I know that it's possible to install Ubuntu on Nexus 7 , but does it mean that I can encrypt my data with veracrypt that I can install on this device ?

Why do you want to use Veracrypt, and not for instance LUKS?

That attack assumes that the attacker has root on the device, and can dump memory at will. Veracrypt will be vulnerable to exactly the same attacks. Anyhow, if someone has read access to your phones RAM, they can probably read the disk at will as well.
