Why run Ubuntu in a Docker container since Docker itself should run on an Ubuntu host?
Is it to mitigate the risk of a MacOS or Windows host? Or for some other reasons?
Any hint would be great,

Docker doesn't need an Ubuntu host... And I think you're missing the point of containers. Try reading What is a Container? on the Docker site.

Thanks for the link. Maybe I'm wrong but I have understood that Windows and Mac aren't optimized for Docker, also Docker run typically on a Linux's Host, hence sharing some resources with the kernel. I have seen containers installing anew Linux, hence my post here.
